Pannukakku [Guest Post]


I am DROWNING under the weight of various parasites (metaphorically of course as they are v v v small - revision done? I think so ha ha if only :((( ) so I am leaving this post in the very capable hands of soon to be reader-of-English (is that even a thing can you tell I do science?) Hannah. Hello hello, as Kate is busy busy busy revising for her extremely important exams (and I mean busy, some nights we've even had to do without our customary Buffy episode - it's a hard knock life, right?) I have offered to step in and post something, ANYTHING so that Hippopotamousse doesn't just fade into the dusty backwaters of the internet like an angsty tumblr that's been outgrown (we've all been there, let's be honest). Vanilla Bean Pancakes for Two

I love Sunday morning breakfasts. I have enough time to prepare a feast for two without rushing around for uni or feeling guilty about not getting out of the house and doing something new and interesting. Sundays are my lazy day. Sunday is pancake day. Or more precisely, Vanilla Bean Pancake day... mmmmmm

Wholewheat Breakfast Donuts with a Mango Streusel Topping

Welcome to day 4 of Donut Week! Today's post is Wholewheat Breakfast Donuts with a Mango Streusel Topping. If you thought my previous donuts were healthy, wait until you hear what is in these - wholewheat flour, yoghurt, orange juice to name the three healthiest ingredients and they contain only 10 g of butter and 45 g of sugar!


These donuts are super easy to whip up - heck if you're a kitchen demon you could even make 'em before work/uni/school/college in 20 minutes from start to finish.

Honey and Pecan Granola

Now I don't know about you but there isn't an hour that goes by when I don't think about food (she says eating a toasted chocolate orange hot cross bun) and when I am lying in bed at 11 o clock - you see if I go to bed any later than 10 my tummy thinks it should be fed for working over time - what nicer thing to think about that a scrumptious breakfast waiting for me in the morning. The thought of my honey and pecan granola certainly sees me into a happy sleep!



Ingredients

150g jumbo rolled oats
150g your basic rolled oats (I use Tesco every day value and despite common misconceptions these own brand oats are delightful and wonderfully versatile!)
150ml apple juice
50g sugar (more or less to taste - last time I made with only a sprinkling of sugar and it is still heavenly)
50g flaked almonds
