Coconut Banana Bread Mini Loaves

HELLO PALS exam season is over and I am BACK IN ACTION. Hannah has been making cookies for the past few weeks to keep me going the perfect angel that she is but other than that the serious baked good shortage has seen me eating clementines and 100 g bars of dark chocolate - that my friends constitutes a balanced diet - however I did find the time to whip up a batch of coconut banana bread mini loaves which are fat free and pretty damn healthy (for Hippopotamousse ;) )

I am DROWNING under the weight of various parasites (metaphorically of course as they are v v v small - revision done? Hello hello, as Kate is busy busy busy revising for her extremely important exams (and I mean busy, some nights we've even had to do without our customary Buffy episode - it's a hard knock life, right?) I have offered to step in and post something, ANYTHING so that Hippopotamousse doesn't just fade into the dusty backwaters of the internet like an angsty tumblr that's been outgrown (we've all been there, let's be honest). Christmas Chocolate Cupcakes with Candy Cane Sprinkles and White Chocolate Gingerbread Men

There are some peculiar people who do not like the great treats that come hand in hand with Christmas, namely mince pies, Christmas pudding and Christmas cake (my brother is one of these people). A chocolate Yule log is the usual alternative dessert served up over the festive period, but let's face it, Yule log can get pretty boring for those who don't enjoy the above mentioned Christmas goodies. So much choice for the boozed fruit eaters, so little choice for the chocolate lovers. So that is why I am stepping in with these Christmas chocolate cupcakes complete with candy cane sprinkles and white chocolate gingerbread people!

I can't believe it's Christmas in TWO DAYS GUYS TWO DAYS serious wtf-ing going on over here. The lack of snow has left me feeling somewhat cheated out of the exciting Christmas build up (or maybe the lack of excitement has more to do with being 20 and not 9 and less to do with the lack of snow.. who knows, ima go ahead and blame the snow anyway).
